In partnership with the 2018 Swedish pizza champion, Amir Bozaghian, FTI presents Sweden’s best and probably most sustainable pizza recipe. The recipe is printed on a pizza box and could be the world’s first pizza recipe with recycling instructions.
The ‘re:cipe’ is currently making its way to some 20,000 young adults across Sweden. The target group is exclusively 27-32 year olds who moved house in October.
“We want to teach young adults about recycling in a way that’s fun but also effective. It might be difficult to change your ways, but our own surveys show that the best time to acquire new habits is when you first move into your new home,” says Veronica Foberg Gustafsson, Director of Communications at FTI.
In addition to the list of ingredients and instructions, the re:cipe also includes tips for how to recycle plastic, paper and metal packaging. Sections of the pizza box can also be removed to save the re:cipe easily and attractively.
“This project has been so much fun. It’s given me an opportunity to spread some happiness with my pizzas, as well as some information about how to live a happy and sustainable life,” says Amir Bozaghian.
10 dl flour, preferably strong flour
5 dl water, 37 °C
30 g fresh yeast
1 tbsp salt
1 tbsp extra virgin olive oil
If you have enough time and patience – use sourdough instead of yeast. It will taste even better!
3-4 fresh tomatoes
2-3 cloves of garlic
Extra virgin olive oil
Dough: Stir the yeast in the water until completely dissolved. Add the salt and olive oil. Add the flour gradually (knead by hand or at a low speed in a mixer with a dough hook) until the dough feels elastic and pulls away from the sides of the bowl. Cover with a towel and let the dough rise at room temperature for about two hours. If you used all of the flour, sort the bag as paper packaging. If the olive oil is empty, sort the bottle as glass or plastic, and the lid as metal or plastic, depending on the material.
Sauce: Chop the garlic finely and fry it in the olive oil. When the garlic begins to turn golden brown, add the chopped basil and tomatoes. Mash the tomatoes with a wooden spoon and add salt and pepper. Strain the sauce and bring it back to a boil on a low heat. Fresh tomatoes taste best, but you can also use canned San Marzano tomatoes from Italy. Sort the can as metal packaging.
Heat the oven to 250 °C. Divide the dough into balls and use a rolling pin to make pizza bases. Spread the tomato sauce and cover with mozzarella. Bake on the middle rack of the oven for about 10-15 minutes, until it begins to color. Garnish with a sprinkling of fresh basil, olive oil and salt flakes. Don’t forget to sort the empty mozzarella packaging as plastic.
